Edamame, Quinoa, and Feta Cheese Salad

Plant-protein superstars edamame and quinoa make this simple cold salad a quick yet satisfying meal or snack.

Yields: 4 servings

Edamame, shelled, fresh or frozen 1 cup
Quinoa, cooked ½ cup
Feta Cheese , reduced-fat ¼ cup
Corn ½ cup
Red Onion, small dice ¼ cup
Lime juice, freshly squeezed 2 tablespoons
Cilantro, finely chopped ¼ cup
Olive Oil 1 tablespoon

Method of Preparation:

  1. Boil water in a medium saucepan and cook edamame for 4-5 minutes and let it cool on ice bath or rinse with very cold water.
  2. Combine all ingredients into a medium bowl and mix well.
