Homemade Vegetable Quiche

Who can resist a delectable quiche stuffed with tons of colorful veggies, gooey cheese, and a buttery crust. This dish is not only nutritious but also makes a beautiful presentation. Eat it for breakfast, lunch, or dinner. Pair it with a cup of soup or salad. With a hefty dose of protein and fiber, this meal will keep you energetic and feeling great.

Yield: 6 servings

Quiche Ingredients:

1 pie crust (store bought or try the easy, homemade version below)
1 tablespoon olive oil
3 handfuls fresh baby spinach
1/2 small onion, chopped
1/2 red bell pepper, diced
1/2 broccoli, chopped
6 eggs
3/4 cup unsweetened almond milk
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. sweet paprika
1/2 tsp. dried thyme
1/4 tsp. cayenne pepper
1/8 tsp. black pepper

Pie Crust Ingredients:

1/2 cup trans fat-free, vegetable shortening
1/4 tsp. salt
1 cup all-purpose flour
3-4 Tbsp. ice water

Method of Preparation

To Make The Pie Crust:

  1. Pre-heat the oven to 350 degrees F.
  2. Combine salt and flour in a bowl. Cut shortening into the salt and flour mixture with a pastry cutter or fork until it is well-combined.
  3. Add water, then stir with spoon until mixture clings together in a ball. Dough may be slightly moist. If dough is too dry or moist add additional water or flour as needed. Don’t over mix. You should see thin swirls of shortening throughout the dough.
  4. Lightly dust your rolling surface with flour, and roll the dough out as desired. To transfer the crust from the rolling surface to the pie pan, fold the crust in half twice. Lift and unfold crust over pie pan.
  5. Bake in oven for 10-15 minutes or until just golden brown.

To Make The Quiche:

  1. Heat oil in a large saute pan over medium-high heat.
  2. Add onions, chopped red peppers, and asparagus, and saute for 5 minutes, or until the onions are translucent. Remove from heat.
  3. In a separate large bowl, whisk together eggs, flour, baking powder, rice or almond milk, salt, paprika, thyme, chipotle powder, and black pepper. Stir in the sauteed vegetables and fresh spinach.
  4. When pie crust is ready, take out from oven and pour the egg and vegetable mixture into the crust. Sprinkle with your favorite cheese.
  5. Place in oven and cook for 45-50 minutes, or until a toothpick inserted comes out clean. Enjoy!
