Pizza with Cauliflower Crust

Versatile cauliflower makes this flourless pizza is a great option whether you’re watching your carbs or not. The cauliflower crust is packed with phytonutrients and fiber to keep you full longer.

Yields: 4 servings

Ingredients:
Cauliflower, chopped  1 head
Large egg, lightly beaten
Parmesan cheese, shredded 1 cup
Mozzarella cheese, shredded 1 cup
Pizza sauce 1/2 cups
Black pepper, pinch

Method of Preparation:

  1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF.
  2. Pulse the cauliflower to fine grain with food processor.
  3. Microwave the cauliflower for a few minutes until soft, transfer mixture to a clean, dishtowel (a flour sack works well), then twist and squeeze all the water. Transfer to a bowl.
  4. Mix in the egg, 1 cup cheese, your favorite spices (oregano works well), and a pinch of pepper.
  5. Pat mixture into your pan and bake for ~20-30 minutes, or until golden.
  6. Top the crust with the pizza sauce, 1 cup cheese, and toppings of your choice.
  7. Bake in the oven for about 10 minutes or until it is nice and melted. Top with fresh herbs and enjoy.
