Salmon with Ginger-Honey Glaze

Heart-healthy omega-3 rich salmon dressed in a sweet and savory glaze. This simple dish pairs well with spinach over a bed of couscous and a lemon wedge or two.

Yields: 4 servings

Orange juice, freshly squeezed 1/2 cup
Soy sauce, low sodium* 1/2 cup
Honey 2 tablespoons
Green onion, chopped 2 stalks
Ginger root, finely chopped 1 teaspoon
Garlic, fresh, minced 1 clove
Sesame seed oil 1 teaspoon
Salmon fillets, 4 oz/serving 16 ounces total
Olive oil 1 tablespoon

Method of Preparation:

  1. In a small saucepan, sauté garlic for 30 seconds to 1 minute then add orange juice, soy sauce, ginger, green onions, honey, sesame seed oil and reduce over high heat stirring occasionally.
  2. Heat olive oil in a medium saucepan, add salmon fillets and cook for 5 minutes on each side.
  3. Remove salmon and top with the glaze.
